Cherry Tomato & Ricotta Pasta

Slow-softened tomatoes meet cool, creamy ricotta.

Ingredients
  

  • 8 oz Short pasta
  • 2 cups Cherry tomatoes
  • 0.75 cup Ricotta
  • 2 tbsp Extra-virgin olive oil
  • 3 Garlic cloves, smashed
  • 8 Basil leaves
  • Fine sea salt & freshly ground black pepper to taste

Method
 

  1. Soften the tomatoes. Warm the oil in a wide pan with the garlic. Add the tomatoes and a pinch of salt. Cook over medium-low heat for 20–25 minutes until soft and jammy.
  2. Cook the pasta. Meanwhile, cook the pasta in salted water until al dente, reserving a mug of cooking water.
  3. Make it creamy. Stir half the ricotta into the tomato sauce off the heat. Add the pasta and enough cooking water to loosen the sauce. Toss well.
  4. Serve. Divide between bowls and top with the remaining ricotta, torn basil, black pepper, and a little olive oil.

Notes

A spoonful of cool ricotta on top gives you a lovely contrast with the warm tomato sauce.
