Burrata Caprese Sandwich

Ingredients
  

  • 2 cups Cherry tomatoes, halved
  • 3 tbsp Extra-virgin olive oil
  • 2 Garlic cloves, smashed
  • 2 Ciabatta rolls
  • 8 oz Burrata
  • 8 Basil leaves
  • 2 tsp Balsamic glaze
  • Fine sea salt & freshly ground black pepper to taste

Method
 

  1. Roast the tomatoes. Heat the oven to 400°F (200°C). Toss the tomatoes with the oil, garlic, salt, and pepper in a snug baking dish. Roast for 30–35 minutes until collapsed and caramelized.
  2. Toast the bread. Split the rolls and toast the cut sides in a skillet. Spoon some of the warm tomato oil onto the bread.
  3. Fill generously. Layer with torn burrata, the roasted tomatoes, and basil. Finish with balsamic glaze and black pepper. Close, slice, and serve with plenty of napkins.

Notes

Let the tomatoes cool for a few minutes before assembling so the bread stays crisp.
