
Cherry Tomato & Ricotta Pasta
Slow-softened tomatoes meet cool, creamy ricotta.

Method
- Soften the tomatoes. Warm the oil in a wide pan with the garlic. Add the tomatoes and a pinch of salt. Cook over medium-low heat for 20–25 minutes until soft and jammy.
- Cook the pasta. Meanwhile, cook the pasta in salted water until al dente, reserving a mug of cooking water.
- Make it creamy. Stir half the ricotta into the tomato sauce off the heat. Add the pasta and enough cooking water to loosen the sauce. Toss well.
- Serve. Divide between bowls and top with the remaining ricotta, torn basil, black pepper, and a little olive oil.
Notes
A spoonful of cool ricotta on top gives you a lovely contrast with the warm tomato sauce.
